This was such a lovely day, sunny, cold, crunchy leaves under foot. We stopped at @mellischeeseltd to pick up some bits for dinner before we headed home, and I was in love with their display outside. Isn’t it just lovely!

Banchory, Aberdeenshire // Dinner at @fallsbyos, and without doubt one of the best meals I have had in Scotland this year.

This is the first restaurant of his own from chef @oshand, which opened in July in the old Falls of Feugh building at Bridge of Feugh. Orry’s CV includes Restaurant Andrew Fairlie and Number One at The Balmoral. Earlier this year he won the Scottish heat of BBC’s Great British Menu and then went on to cook the starter at the banquet in Liverpool.

The restaurant serves a single tasting menu, and you don’t see the printed menu until the end of the night, so each course is a genuine surprise.

The evening started with snacks by the open kitchen bar area complimented with a glass of Laherte Frères blanc de blancs champagne. The amuse bouches consisted of a golden beetroot and cashew tartlet, rosti with smoked trout belly and oscietra caviar, and a steak and béarnaise croustade which Orry himself brought out to us.

From there we moved through to the central round dining room. First to be served was parker house bread accompanied by cultured butter which really was a sensation in itself. Followed with a cup of umami-infused vegetable tea decadently poured into ceramic cups table-side.

Next came the fish courses, Stonehaven brown crab with an oyster emulsion, blue mussel, horseradish and dill and a BBQ Isle of Skye scallop with baba ghanoush and vadouvan. And aged sea trout sitting on chanterelles from Banchory in a vin jaune butter sauce.

For the main course, Aberdeenshire lamb arrived with a lamb fat steamed bun and a side rib glazed with black garlic balanced on a small podium next to the plate.

Preceding dessert, a palate cleanser of sorbet topped with English sparkling wine reset the taste buds. Then dessert, a sunflower seed praline parfait with Forest Farm milk ice cream.

To finish the evening off, a trio of petits fours: whisky salted caramel and miso madeleines, white chocolate and sour cherry fudge, and a custard tart made with bay leaf from the garden.

A wonderful evening and well worth booking into dine if you are visting Aberdeenshire.
