TEXAS RECAP PT 2: MOST INNOVATIVE DISH GOES TO KHÓI BRISKET PHỞ

Boy am I still dreaming of this @khoibarbecue phở! The phở itself was the best I’ve ever had (and yes I’ve been to Vietnam!) and the smoked brisket complimented the dish perfectly 🇻🇳🇺🇸

Everything I had at Khói just kicked ass! Bold, vibrant Vietnamese cuisine ‘meats’ Texas BBQ flavours but this dish stood out. It is worth travelling a few hours and more for - thank me later for the recommendation! Thanks for signing my book too @donnguyyen 📖

Peace, love, and smoke. 2024 was a year where barbecue took me on adventures all over Texas, Charleston, Jackson Hole, and London. It was not only a gift of experiences, but also one that offered solace & introspection.

Each opportunity to light a fire and share Vietnamese American culture felt like being drawn closer to my community and purpose.

It was also a year of renewed gratitude for time spent with family, friends old and new, and now that I’m 38 - those days waking up with minimal lower back issues.

Creatively, I was lucky to cross paths with and be inspired by those rare individuals that pursue their craft with intention, genuineness, and truth.

I’m excited to channel that energy into this year and Khói. Wishing you all good health, good fortune, and good times.

Stoked to kick off the year by partnering with our friends at @mill.scale. Khói Curry No. 1, our signature curry sauce, will be available for purchase in Lockhart, TX at Mill Scale’s new fabrication shop and store starting in spring 2024.

When mom’s phở graces the digital covers of @cntraveler.

So grateful to be able to share our immigrant story through barbecue.

Beyond honored to be recognized amongst fellow Vietnamese-owned businesses in Houston we admire @bloodbrosbbq @saigonhustle @theblindcook.

Repost • @cntraveler Welcome to Houston, where Vietnamese flavors meet Texas smoke, and a new generation of Vietnamese Texans are bringing their duality to the kitchen, with a delicious result.

“Call the cuisine here Viet-Texan,” writes @danqdao, “the evolutionary next step from Viet-Cajun, a fusion cuisine popularized around 15 years ago and pioneered when Vietnamese immigrants, who arrived en masse here after the Vietnam War, adapted their native seafood boils with local ingredients and set a new standard for diasporic American cuisines. It’s their kids, the second-gen Vietnamese, leading now. For this generation of chefs, entrepreneurs, and Texans, phở and barbecue evoke a sense of home in equal measure. “Barbecue is safe ground,” says Don Nguyen, the founder of Khói, a recurring Houston pop-up that launched in 2017. “It’s iconic for all Texans, and we’re as Texan as anyone else.”

Starting my 37th trip around the sun. Incredibly grateful for the last twelves months.

Feels like I’m just finding my groove. With my career in renewable energy and my pursuit of barbecue. In both fields, I find so much inspiration and am becoming more comfortable in my own skin. Finding my voice and place within the collective journey on this rock hurtling through space. I am grateful for genuine relationships and individuals I’ve been lucky enough to spend time with.

This past year barbecue provided chances for me to cook in South America (Brazil rocks) and Lockhart (the capital of Texas barbecue). Renewable energy gave me the opportunity to speak at the world’s premier energy conference. Being in the room amongst global policymakers and leaders, learning how teams around the world are tackling the climate crisis gave me immense hope for the future.

Both sets of opportunities showed me that showing genuine interest and having a positive mindset go a long way.

I sometimes feel like an outsider in both areas and struggle with bouts of imposter syndrome. It’s a continuous process, but I’ve learned that it’s ok have self-doubt, to be comfortable with failure, and to practice self-compassion.

Let the small things slide. Stay curious. Be genuine in intent. Let the people that have inspired me know it. Focus and pursue ideas with vigor. Be kind to others and myself.

Much more to learn and hopefully share next year.

H-Town till we drown. Always such an honor to cook for the @houstontexans players and coaches lunch. It’s something we look forward to every year.

This year was our third time working with the team and extra special since it was the regular season opening weekend.

We served brisket, smoked jerk chicken & papaya mango slaw sandwiches, fish sauce caramel wings, and cà phê sũa đá pudding.

We wanted to take the time to thank all the players, coaches, stadium and culinary staff for hosting us. We’re loving the energy from the squad from the pre-season. Hoping y’all have a great start to the 2022-2023 campaign 🤘
