Erre — The Shared Vision of Clément Vergeat & Marine Mateos. ✨🌿 What impressed me most at Erre wasn't a particular dish. It was the rare feeling of discovering a restaurant that already possesses a genuine identity, despite still being at the very beginning of its story. Getting there took courage. Leaving Paris behind and settling at Domaine du Roncemay to build a project that truly reflects who they are. A bold decision that gives this restaurant its real meaning. 🍃 That sense of coherence is everywhere. In the peaceful setting. In the warm, genuine hospitality. And above all, in a cuisine that feels unlike anything else. Clément draws inspiration from the Cévennes, the Mediterranean and Nordic cuisine. Yet nothing feels borrowed. Everything has been absorbed and turned into something deeply personal. The pepper tartlet immediately sets the tone. Vegetables shape the rhythm of the menu. Then comes the langoustine. A knockout. Explosive, intense and unforgettable. The remarkable work around rhubarb confirms the desire to explore a single ingredient in all its complexity. Marine Mateos is undoubtedly the soul of the house. First and foremost a pastry chef, she approaches desserts as if they were savoury dishes, borrowing techniques and cooking methods from the kitchen. The result is a collection of desserts with remarkable depth, perfectly extending the philosophy of the menu. In the dining room, her warmth and sincerity embody that same vision. 🤍 The wine programme is just as coherent. I'd simply love to see that same creativity extended to a truly house-crafted non-alcoholic pairing. More than a succession of dishes, Erre tells the story of two personalities who chose to build something deeply personal. And that sincerity can be felt from the first bite to the last. Erre has only been open for a few months. Yet it already feels like a restaurant that knows exactly where it is heading. Clément Vergeat and Marine Mateos have already found an identity that many spend years searching for. ✨ Erre, Domaine du Roncemay, Chassy 🌟
