Listen, dining at @musangseattle when in Seattle is a no-brainer. And specially on Filipino American History Month? Ha! Musang’s Fall Menu didn’t disappoint with the quintessential favorite, Lumpiang Shanghai, followed by squid in Pancit Bihon, scrumptious Green Mussels in Coconut Broth (my favorite); Pinakbet (my mom’s favorite) and saved the best for last: Bibingka and Ovaltine Chocolate Mousse. The hospitality at Musang was as excellent as the fine Pinoy food served here, folks. For the past five years, the Filipino American Curriculum Team of Seattle (FACTS) have been working to advance Filipino American history education.

They believe every student deserves the opportunity to learn about the histories, experiences, and contributions of communities that have too often been overlooked in our classrooms. This work is about more than curriculum; it’s about representation, belonging, and ensuring future generations understand the stories that have shaped our communities.
FAEW is excited to share Galavanting with Rex Navarrete, a Filipino American History Month fundraiser supporting FACTS’ efforts to bring Filipino American history into our schools and invest in our community’s future.

On my road trips to Seattle I always wanted to try @musangseattle but I always had my dog with me. So I was excited to see they were doing a @rouxportland collab dinner with @gadogadopdx . Here are shots from last night’s feast, which was presented as a family style tasting menu. I could see the mix of Filipino and Indonesean-Malaysian dishes but after awhile there were so many plates I couldn’t keep track and just enjoyed the flavor bombs of each dish.

My favorite were the Kauai shrimp with a crispy yet soft milk bun, the Inaloban Na Isda mackerel dish with ikura, and classic well done roti. The assortment of sambal and dips were fun to try throughout dinner.

Special shoutout to @cafeolli who did dessert, which was a brown butter cake with mango curd. The cake was mild in flavor so was a nice contrast to dinner, ending the meal with a clean flavor.

A really memorable dinner and great celebration of women chefs!

A Food & Wine Best New Chef in 2022 and a James Beard Award finalist in 2024, Melissa Miranda has earned national recognition for her cooking at Musang in Seattle’s Beacon Hill.

Her Filipino restaurant began as a pop-up and opened a permanent home in January 2020. When the pandemic closed its dining room, she opened a community kitchen to help keep people fed.

At the table, that same sense of care takes a personal form: pinakbet with tempura vegetables and pickled bitter melon, whole fried fish, and dishes carrying the memories of the people who first made them.

We speak with Miranda about family, Filipino flavors, and cooking toward home.
