No lie, it was scary walking up to random people’s houses, but once we started talking, I realized we all have more in common than we think, and it’s our job to organize and protect our neighbors.

Over the past 10 years, Carbon Knife has shown us the value of community. The go to space for so many chefs in town, Carbon is the nexus, whether it’s coming in for a regular knife sharpening or picking up a new set of tweezers, Carbon is reliable.

Carbon has taught us the value of our tools, maintaining them and always using the right one for the job. This is how we approached the design of their second location on Larimer.

We designed a showroom that celebrates the knives and specialty tools you never knew you needed while creating space for education. As you walk through the space you are greeted by warm faces and the most functional part of this store, the sharpening room, brightly lit and fully on display. It is true craft visible throughout the store.

Carbon creates community; we loved creating a space that continues to develop it.

On the other side of institutional acceptance is freedom. Freedom to speak your values, freedom to explore the version of yourself you want to become, without the risk of being punished for using your voice.

@abouttobe_tv is what happens when a door is closed, but the spirit refuses to die. It’s building a new path to success, parallel to the old institutional systems for everyone who comes after.

@abouttobe_tv is for the unapologetic creative. A place where we share stories from those brave enough to follow their dreams. We hope to inspire others, because freedom lies on the other side of fear.

Rebuilding purpose.

How do we rebuild ourselves after losing access to institutions that punish us when we speak up for others? What does it mean to have a platform? What responsibilities do we have to our greater community, and not just our own egos? And how do we navigate a landscape that wants to silence us for using our voice?

Courage is not the absence of fear, but acting despite it. Keep cooking, keep filming, and keep creating.

The dream for me was to always work alongside my brother, combining our passions of food and film, and bringing it all together.

Our ambitions and styles have evolved so much since that first project.

@oliverrrrrrrrrr and I started experimenting with our collaborations. I told him that I wanted our restaurant socials to be different from everyone else’s. I wanted people to feel like they were part of our journey, and I wanted to break the old-school chef stereotype.

I’ve never been one to fit into any box, in fact, I’ve almost become resentful of my title as a “chef”, because I am so much more than that. I’m a dreamer, a creative, an activist, an organizer, and a mentor to the next generation of hospitality workers who will one day run our industry.

I wanted our content to mirror that energy and to inspire everyone who would come after us. This led to @chitchats.tv, Oliver’s brainchild capturing the lives of Denver’s creative community.

@sapsuarestaurant and the “trứng và trứng” was featured in episode one.
