“Heard, cousin!”
Episode 1 of The Bear has one of my favorite expositional editing sequences in a tv series. As Carmy frantically gathers coins & vintage denim to barter for meat, we feel his anxiety through whip-pans, smash zooms and all-around fast cutting patterns that the show is so well known for.

But for me, it’s the seemingly random film photos that flash between the chaos that captured my attention. Such a small addition that spoke volumes of history, family & Chicago.
Although this isn’t the first time this technique was used, editor Joanna Naugle implemented it beautifully.

When I tasted the food at Ni & Anna’s restaurant for the first time, I was blown away. I was instantly teleported back in time to every Sunday morning breakfast that my mother had made for us, every holiday celebration that had an assortment of homemade vietnamese dishes, Bolsa catering, and random American food. They so perfectly captured Vietnamese food, not in the traditional way but in the way we had experience it growing up.

In order to convey the experience I had at sắp sửa, I knew i had to cut this one up like Joanna. I incorporated flash cuts of 35mm film photos as well a cross dissolve to mimic the show.
So even though he asked me not to, I edited it like The Bear.

Because it’s fuckin lit. Or maybe i didn’t hear.

Đặc Biệt: An Extra-Special Episode with @chefnininguyen

Tune in for this extra special episode of Chit Chats featuring acclaimed Vietnamese American chef and author Nini Nguyen, known for her appearances on Top Chef, Last Bite Hotel, and most recently, Tournament of Champions.

Đặc Biệt, Nini’s debut cookbook, is an expansive look at contemporary Vietnamese cuisine. The title, meaning “special” or “with everything,” doubles as a slang term for “being extra” - a mantra that she embraces wholeheartedly, from her chic fashion sense to her bold cooking style.

Nini’s influences span the globe, from Vietnam to her home state of Louisiana, and her book includes family recipes that have evolved from generation to generation. Nini’s collaborative dinner at Sắp Sửa last December gave Denver a taste of Đặc Biệt, and created an opportunity for Nini to bond with Chef Ni over their shared Vietnamese American heritage.

In this episode, Nini speaks candidly about her journey to shape her identity, find her audience, and serve up food that celebrates diversity and uplifts local communities. Her exuberance and confidence make her a creative powerhouse, a fierce competitor, and a dynamic culinary leader. Most of all, Nini’s unapologetic mindset is a masterclass on how success will come to those who trust in themselves.

Over the past 10 years, Carbon Knife has shown us the value of community. The go to space for so many chefs in town, Carbon is the nexus, whether it’s coming in for a regular knife sharpening or picking up a new set of tweezers, Carbon is reliable.

Carbon has taught us the value of our tools, maintaining them and always using the right one for the job. This is how we approached the design of their second location on Larimer.

We designed a showroom that celebrates the knives and specialty tools you never knew you needed while creating space for education. As you walk through the space you are greeted by warm faces and the most functional part of this store, the sharpening room, brightly lit and fully on display. It is true craft visible throughout the store.

BOOMBOTS

What do Lil Wayne, Supreme, Pharrell, and Louis Vuitton have in common? These heavy hitters were the entire conversation at the first design meeting for @boombots_pastashop Eventually we got to food and drink but knew that design set would establish the tone in this pasta shop.

Clif and Cara let us run with that concept, and working along side @hellopaperlaundry we were able to create a space connected through food, branding, and good vibes.

For us, Boombots quickly became the favorite throughout the office for the fun colors, clean details, and quirky surprises that are scattered throughout the space. by @rudecatprd
