Have we made eating grains more confusing than it needs to be? Rice makes you gain weight. Wheat must go. Gluten-free is healthier. And millets will apparently fix everything. These are questions the audience asked me at “The Living Table: Lost Grains of India” by @inkpotindia_ at @begreenr , with moderator @simarmalhotra12 and fellow panellist @nitindixit 🌾 RICE AND WHEAT DON’T NEED TO DISAPPEAR Look at the proportions on your plate. If grains take up almost all the space, changing the grain won’t fix what’s missing. 🥣 FERMENTATION HAS A PURPOSE Fermenting grains can reduce phytate, a natural compound that binds minerals such as iron and zinc. This can make some minerals more available during digestion. 🍞 GLUTEN-FREE ISN’T AUTOMATICALLY HEALTHIER A gluten-free diet is essential for coeliac disease and may be advised for other medical reasons. But it has no established health or weight-loss advantage for the general population. 🌱 THERE’S NO SINGLE “BEST” MILLET Ragi stands out for calcium. Bajra contributes iron. Foxtail and proso offer a relatively higher protein contribution. Different nutrients are a good reason to rotate your grains. ban. ⚖️ MILLETS AND WEIGHT LOSS: THE SWAP ISN’T EVERYTHING Less-polished millets can add fibre, which may help you feel fuller. But switching grains doesn’t necessarily reduce calories. Millet is a grain, not a medicine. Eat it for nourishment. Don’t expect miracles. Comment MILLET for my quick guide to each millet’s strongest point. Save, share, and drop any more grain questions you have below. #Millets #WholeGrains #IndianNutrition #HealthyEating #kavitadevgan

One evening in Rome, Simar Malhotra visited the Colosseum and saw how a historic space could still mean something to people today. Then came the thought: why not bring live music into India's own monuments? "I call it the phoenix moment," she says. She had started early. At 17, her first novel was published, a story about young people having the agency to create change. She went on to Stanford and Columbia Business School, knowing she wanted to return to India. In 2019, she did, and the first Inkpot India Conclave brought together people from different creative fields. A year later, COVID paused the project, and she shifted to her family's logistics business. That business is what took her to Italy. Since then, a sitarist and a flautist have performed at the Qutub complex under Inkpot's Songs of the Stone, and every month, 70 to 80 volunteers join Inkpot to clean a heritage site, usually followed by a walk led by storytellers. It started with one evening in Rome. "I realized that this is what I want to do." Find out what one evening in Rome started for Simar Malhotra in this The Global Indian feature by @deeps115 . Millets do not need more hype. They need better understanding. These pictures are from The Living Table: Lost Grains of India, hosted by @inkpotindia_ at @begreenr , Greenr Café, GK1. The conversation was beautifully moderated by Inkpot founder and author @simarmalhotra12, with Greenr founder @nitindixit bringing the food and restaurant perspective, and me bringing the nutrition lens. The evening also included a contemporary five-course dinner that brought the grains we discussed back to the table. My biggest takeaway: we did not lose these grains. We stopped cooking them. Most of us know bajra, jowar and ragi. But India’s main millets also include foxtail, little, kodo, barnyard, proso and browntop. Now for the nutrition reality. Millets generally have a lower glycaemic index than refined wheat and polished rice. One large review found an average GI of 52.7, about 36% lower. But that average is not a guarantee. Type, portion, processing and pairing all affect the blood-sugar response. Minimally processed forms offer the clearest advantage. Millets contribute protein, but are not the whole plan. Build the meal with dal, beans, curd, paneer, eggs, fish or chicken. We do not need one “protein hero”, just a better-balanced plate. And please turn the packet around. A millet biscuit, namkeen or breakfast cereal may still contain refined flour, excess sugar, salt and poor-quality fat. Check the millet percentage and first three ingredients. If millet leaves you bloated, start small, cook it well, drink enough water and increase gradually. One fact I love: raw ragi contains about 344 mg calcium per 100 g, unusually high for a cereal. But every millet brings something different, so rotation makes more sense than another superfood obsession. Bring them back as meals: Juwar jo Dodho, bajra roti, ragi ambali or millet-dal khichdi. A lost grain is not truly found until it returns to dinner. SAVE this millet nutrition guide. SHARE it with someone who thinks millet automatically means healthy. #Millets #AncientGrains #MilletNutrition #BloodSugarBalance IndianFoodWisdom Event photograph from a discussion on India’s lost grains. Text introduces five commonly misunderstood truths about millet nutrition and asks viewers to swipe before their next millet meal.

Under the moonlit mystical domes of Delhi's monuments, history and culture are coming together in ways least expected. @simarmalhotra12 , the Stanford- and Columbia-educated founder of @inkpotindia_ , is reimagining the city’s cultural spaces with Songs of the Stone which brings classical concerts to places like Qutub Minar and Purana Qila. Also the author of two novels, she organises heritage walks and clean-up drives to maintain the beauty of these iconic landmarks. The next concert of the series features @amritakaurmusic live at Purana Qila on Oct 10-11. Here is my interview with Simar for @global_indian_official @studio.shibui https://www.globalindian.com/story/cover-story/simar-malhotra-inkpot-india-heritage-experiences/
