🇧🇴 Have you ever tasted wine from Bolivia?
My first time was at @nazka_amsterdam . The sommelier @the_grapeful_ale introduced these wines:

🍇 Moscatel de Alejandría
🍇 Vischoqueña Blanc de Noir
🍇 Negra Criolla

All three come from Jardín Oculto @jardinocultowines in Bolivia’s Valle de Cinti, where vineyards sit around 2,300 metres above sea level. Here, vines more than 100 years old climb native molle and chañar trees in a traditional system known as “arbolitos.”

The altitude brings intense sunlight, while the large difference between warm days and cool nights helps the grapes retain freshness and acidity.

Founded by sisters María José and Mercedes Granier, Jardín Oculto is helping preserve Bolivia’s historic vineyards and Criolla grape varieties. In 2026, Tim Atkin MW @timatkinmw named it Bolivian Winery of the Year.

JARDÍN OCULTO
MOSCATEL DE ALEJANDRÍA 2023

📍 Finca San Roque, Valle de Cinti
🍇 100% Moscatel de Alejandría
⛰️ 2,300 metres
🍷 11.9% alcohol

Moscatel is one of the world’s most recognisably aromatic grape families, but this is not the simple, sweet style many people expect.

The wine shows white flowers, orange blossom, honey and orange peel, with a fresh, creamy texture and a saline, herbal finish.

The grapes are transported to the winery at night, arriving naturally cool. The cuvée is fermented with indigenous yeasts in concrete egg, where it also matures before moving to stainless steel and bottle.

💡 Interesting fact:
Moscatel de Alejandría is also the principal grape used to make Singani, Bolivia’s national grape spirit.

A fascinating, elegant expression of a grape many people underestimate.

JARDÍN OCULTO
VISCHOQUEÑA BLANC DE NOIR 2023

📍 Finca Lumen, Valle de Cinti
🍇 100% Vischoqueña
⛰️ 2,300 metres
🍷 11.4% alcohol
🍾 Only 1,000 bottles produced

This might be the most fascinating grape you have never heard of.

Vischoqueña is a naturally occurring crossing of white Moscatel de Alejandría and red Negra Criolla. It is considered uniquely Boli Three Jardín Oculto Bolivian wines displayed together at Nazka Restaurant in Amsterdam: Negra Criolla 2023, Moscatel de Alejandría 2023 and Vischoqueña Blanc de Noir 2023, all produced from old vines in the high-altitude Valle de Cinti.

SAVE this Peruvian fine dining for your next Amsterdam visit 🤓

@nazka_amsterdam
@michelinguide

I had a pleasure to visit this amazing place with my friend @matt.wilson.gc in June and we had such a great time!

What makes the place special:
Peruvian cuisine shaped by Indigenous traditions and layers of Japanese, Chinese, African, Spanish, Italian and Indian influence.

Chef @kooshkothari was born in India, raised in Peru and trained in some of Lima’s most respected kitchens. His food feels deeply connected to Peru, but never predictable.

Started off with a cocktail 🍸: Pisco Sour

Fresh citrus, silky foam and the unmistakable character of pisco made this a bright, refreshing start.

A classic Peruvian cocktail in exactly the right setting.

A little started with the cocktail:
Zeeland oyster N.3, piparra granita and kaffir lime oil.

Cold, saline and incredibly refreshing. The kaffir lime lifted the oyster’s briny sweetness, while the frozen piparra added a tangy green-pepper note.

A small opening bite, but already a very clear introduction to NAZKA’s style

Not the churro I was expecting and that was the point.

A savoury potato churro with green pickled mango: warm and crisp, with the richness of potato cut by something fruity, sharp and lightly spiced.

This little bite was one of the first signs that dinner would move freely between Peruvian and Indian flavours.

🐟 SALMON TIRADITO

Cured salmon, cashew-nut leche de tigre and salmon roe.

Rich salmon met the bright acidity of leche de tigre, while cashew added a softer, creamier texture. The salmon roe brought another burst of salinity.

Fresh, rich, citrusy and distinctly Peruvian - exactly the kind of dish that makes wine pairing interesting.
