6 years ago starting my career in Bali and he was my first Chef that I worked for. Now we had a chance to try his own restaurant! what an amazing food and hospitality! Never imagined that this night would happen and truly grateful on how life brought us to this stage of life. Since 6 years ago I always believed that when you open your own restaurant It would be a great restaurant🫶✨

Most chef collabs are a greatest-hits menu. This one wasn't. 🍽️

When Nouri came to Kindling Jakarta, both teams left their signatures behind and started from a blank page. Every course was new, made only for these nights.

We're still thinking about the botan ebi in fresh coconut milk with mala. The heat and the creaminess slowly gave way to the prawn's natural sweetness. The king crab with sambal hijau was gentle at first, then it hit hard. And the scallop with nduja, silken tofu and Hokkaido corn was one long wave of umami.

Fresh, fearless, and genuinely inventive.

Following a successful collaboration in Jakarta, @chef_zortan and @valliannn of @kindlingjkt reunited in Singapore for an exclusive, one-day-only four-hands lunch and dinner at @restaurantborn. Combining Tan’s mastery of French-Chinese gastronomy with Gunawan’s contemporary Franco-Asian flair, the duo crafted a seamless menu that highlights the best of both worlds with signature and collaboration dishes.

One night. Two kitchens. One table.

On 25 September, @chef_zortan of @restaurantborn , Singapore, welcomed @valliannn of @kindlingjkt , Jakarta, for an evening that reminded us why collaboration between chefs who share a common language — French technique, Asian soul, a deep respect for the story behind every ingredient — produces something neither kitchen could arrive at alone.

Chef Vallian brought with him the spirit that named his restaurant: a hopeful start of something great. What unfolded across the courses that evening was exactly that. Two menus in conversation, two points of view finding common ground, and a dining room full of guests who understood they were witnessing something that would not happen again in quite the same way.

To Chef Vallian and the Kindling team — thank you for crossing the causeway and cooking with us. The fire you started here is still warm.

To every guest who joined us for the evening — we hope you felt what we felt on the other side of the pass.

‘Four perspectives on the flavors we call home’

Excited to welcome Ardy Ferguson @theardiffer , winner of the S.Pellegrino Young Chef Academy Competition 2024–2025, for a special collaboration at August, organized by @sanpellegrino_official @sanpellegrino_youngchef

Currently a sous chef at Belon in Hong Kong, Ardy drew inspiration from his Indonesian roots for his winning dish; Archipelago Celebration, which earned him the title in Milan.

Joining us for the evening is our good friend Chef @valliannn of @kindlingjkt , alongside our very own Chef @ardikadwitama

Four chefs, each with our own experiences and approaches to cooking, coming together to explore our shared roots.

Chefs @chef_zortan of @restaurantborn and @valliannn of @kindlingjkt in Jakarta team up for a four-hands collab that marries Chinese flavours and ingredients (one from a Chinese-Indonesian lens and the other from a modern chinese one) with the elegant French influences.

One of chef Val’s favourite street food from Medan: Chee cheong fun gets a modern update - the rice rolls are swathed in light but flavorful leek and water chestnut foam laced with spice and a king crab roll embedded in the middle. 😋😋

I also enjoyed the char-grilled jade abalone, that shined like a golden spotlight under the restaurant's skylight, served with preserved black olives konjac rice doused in rice abalone liver sauce. 🔥

The tempura oyster with burnt chilli-infused squid noodles in dashi foam hits such a delicious spot. The mains had superbly crispy sheets of sea cucumber in a delish mapo minced pork sauce that went great with the koshihikari rice with nutty black porcini mushrooms from Bhutan and the grilled wagyu perfumed with Sarawak pepper.
