what’s happening at Jalan Cikini Raya no.20 - a restoration project that’s been underway for almost a year now. we’re a couple of weeks shy from opening our doors, doors to a restaurant where everything is done with intention and attention - something that’s incredibly important to me.

it’s been a great pleasure to collaborate with @rafaelmirantiarchitects , @sorsfurniture @chasrosari , folks of @biko_group , @felix_aldo from @fima_interior , Pak Michael from @samarinda.pt to carry through the restaurant’s mindset since day one even on construction phase.

@nadsap - it has been a fairly long walk but the end of the (construction) tunnel’s at least visible now 🤣🤍 let’s get this thing going taken in Kindling Jakarta by @valliannn

One night. Two kitchens. One table.

On 25 September, @chef_zortan of @restaurantborn , Singapore, welcomed @valliannn of @kindlingjkt , Jakarta, for an evening that reminded us why collaboration between chefs who share a common language — French technique, Asian soul, a deep respect for the story behind every ingredient — produces something neither kitchen could arrive at alone.

Chef Vallian brought with him the spirit that named his restaurant: a hopeful start of something great. What unfolded across the courses that evening was exactly that. Two menus in conversation, two points of view finding common ground, and a dining room full of guests who understood they were witnessing something that would not happen again in quite the same way.

To Chef Vallian and the Kindling team — thank you for crossing the causeway and cooking with us. The fire you started here is still warm.

To every guest who joined us for the evening — we hope you felt what we felt on the other side of the pass.

‘Four perspectives on the flavors we call home’

Excited to welcome Ardy Ferguson @theardiffer , winner of the S.Pellegrino Young Chef Academy Competition 2024–2025, for a special collaboration at August, organized by @sanpellegrino_official @sanpellegrino_youngchef

Currently a sous chef at Belon in Hong Kong, Ardy drew inspiration from his Indonesian roots for his winning dish; Archipelago Celebration, which earned him the title in Milan.

Joining us for the evening is our good friend Chef @valliannn of @kindlingjkt , alongside our very own Chef @ardikadwitama

Four chefs, each with our own experiences and approaches to cooking, coming together to explore our shared roots.

This September, we are honoured to welcome a kindred spirit to our kitchen.

Chef Vallian Gunawan of Kindling, Jakarta, joins Chef Zor Tan at Born for a single evening of collaborative cooking — two chefs whose journeys, though shaped by different cities and different chapters, arrive at the same place: Asian flavours told through the discipline and rigour of French technique.

Chef Vallian opened Kindling on 23 December 2024 in a 1900 heritage residence that once belonged to the family of a pioneer in Indonesia’s optical industry. In just months, the restaurant has earned recognition from Prestige Gourmet Awards, Tatler Indonesia, and Tatler Asia’s Best 100 Restaurants across the Asia-Pacific.

Together, Chef Zor and Chef Vallian will present a multi-course dinner that draws on both their heritages, their training, and the particular kind of conversation that only happens when two chefs who respect each other’s work share a single pass for one night.

Here’s you’ll find lemongrass rice, ayam goreng serundeng, tempe orek, labu siam, telur balado, assorted gorengan, and homemade cendol.
