It’s release time once again! Six special new releases! A mixture of Process and Terroir forward coffees, all really unique profiles and styles!

1. EL MANGO • HONDURAS
  Cup of Excellence 2026 #5
  Washed

2. DUWANCHO • ETHIOPIA • Daye Bensa
  Natural

3. EL PARAÍSO • PAPAYO
Colombia • Anaerobic Thermal Shock Washed

4. FINCA LÉRIDA • PANAMA
  SL34 • Honey Waterfall

5. CGLE • LA ESPERANZA
  Colombia • Natural

6. NINGA HILL • BURUNDI
  Long Miles Auction • Natural

Most available on the bar this week as well as on the website and wholesale portal!

EL MANGO • HONDURAS

Cup of Excellence 2026 • no.5
Honduras • Santa Bárbara
SL28 • Washed

Our first ever COE release comes from this year’s Honduras Cup of Excellence.

El Mango is produced by Evin Joel Moreno Reyes in Santa Bárbara and placed fifth in the Exotic category of the 2026 competition.

A washed SL28, and a coffee we bought because it’s such a beautiful expression of the variety, complex acidity, remarkable clarity and a delicate yet somehow deep sweetness.

We were fortunate enough to secure a substantial amount of this lot, some will go into the freezers to preserve but we also have a good amount available for both wholesale and retail. It’s a coffee we are really proud to showcase and so we have priced it at a much more reasonable price point for a coffee like this.

Available tonight online and at the bar.

DUWANCHO • ETHIOPIA
Natural

The long awaited return of a coffee that was one of our first ever releases!

It’s a classic natural Ethiopian coffee in the best possible way. Duwancho is an incredibly fruit forward coffee but remains beautifully balanced clean, sweet, complex and structured.

EL PARAÍSO • PAPAYO

Colombia
Anaerobic Thermal-Shock Washed

This Papayo has undergone an anaerobic thermal-shock washed process, enhancing the natural varietal characteristics into a lively, bright cup. Despite the processing intensity it really doesn’t dominate the cup. Instead it’s clean, versatile and has a ton of depth.

FINCA LÉRIDA • PANAMA

SL34 • Honey Waterfall

An SL34 from Finca Lérida in Panama, with a profile that immediately reminded us of some of the washed Kenyan coffees we love.

Very fortunate to have received this incredible GDS (dual grinder) from @option_o.coffee

Not only is this a really beautiful work of design but releases at the perfect time for our developing approach to espresso on the bar. Two giant burrs, one a 100mm conical with a PCM and one 102mm flat. This grinder will allow us to really explore texture in ultra light roasts while also using the flat for super high clarity and brightness.

A huge thank you to Option O for really pushing on all fronts, super impressive! by @taithcoffee

Five new coffees! Available on both the wholesale portal and retail site now. Roasting for these lots begins Wednesday, with orders shipping from then. Available at the bar this Friday - Sunday

This release signals a little bit of a shift with how we frame our offering. At the moment we are using Terroir forward and Process forward. The language will likely develop as well as how we present the coffee. Terroir will be coffees where variety and farming shape the cup, and coffees where processing is a more dominant part of its character. Both styles have their place, and all require hard work from producers that should be respected! We hope the small change will help give accurate expectations and create a better distinction between each approach.

Anyway here are the coffees

Gesha Village E-04 - Ethiopia - Natural - Illubabor Forest
A distinctive Ethiopian forest variety grown at Gesha Village. Complex, floral and clean!

El Oasis - Colombia - Geisha - Washed (60 hour Ferm)
A high-elevation Geisha from Tolima, We are really into the ideas behind this farm and have selected our first offering from them for its clarity, florality and delicacy. Goooooood stuff!

Bambito Estate - Panama Washed - Caturra & Catuai
A classical expression of Panama built around Caturra and Catuai rather than Geisha. Clean, structured and quietly complex. Very subtle, citric and soft. Very different from our previous offerings from the Bambito estate but classy as expected!

Edinson Argote - Q05 - Colombia - Washed Yeast inoculation/Thermal Shock - Bourbon Sidra
A bright and expressive Sidra from Edinson Argote in Huila, shaped by precise fermentation and washed processing. A super popular coffee from last year returns in the new harvest, will likely not be around for too long. Super bright and expressive, big big guava notes with minimal funk.

CGLE Potosí - Colombia - Natural - Mandela
A deeper, fruit-led expression from Potosí, the original Café Granja La Esperanza farm. Sweet, fruity and a well structured cup. It’s always a pleasure to offer a coffee from CGLE and this compliments our current offering of their geisha lots by @taithcoffee

Four new coffees! Things have been selling out fast so we’ve been working on getting things released a little quicker. A couple of new producers along with two favourites returning.

All will be available on the website and for wholesale partners later this evening!

Kamavindi Estate - Kenya - Natural (Fruit Forward)

A very fruit-forward expression of Kenya from Peter Mbature and his family at Kamavindi Estate in Embu. Tropical, juicy and sweet. We have really been enjoying Natural Kenyan coffees this year and this is the best we have cupped. We have wanted to offer coffee from Kamavindi for years and are so excited to do so with this lot! We hope to work together and offer more great Kenyan coffee in the future!

El Paraíso Cardamomo - Colombia - Yeast Washed / Thermal Shock (Process Forward)

It’s always a pleasure to offer coffee from Juan and the team at Finca El Paraíso. For this lot the masters of coffee processing use cultured fermentation and thermal shock to create an incredibly distinctive cardamom and spice character. One of those coffees that shows just how far processing can transform what we find in the cup. Exciting to see this one returning after so much demand!

Chorro Alto - Caturra Chiroso, Colombia - Yeast Washed / Thermal Shock (Process Forward)

We have only offered a few coffees produced by Luz Ángela Rojas but they are always enjoyed so much! This is another process forward coffee, bright and tropical while hot and lime and pineapple when it cools both alongside a more unusual chocolate and umami character.

Fazenda Aracaçu - Brazil - Natural / Aerobic Fermentation (Process Forward)

Our first Brazilian release this year! A quite different expression of Brazil (we have another releasing soon) Fruit-led, sweet and complex, using aerobic fermentation to push the character of the natural process while retaining clarity. Incredible work from Carmem Lucia and the team! by @taithcoffee

Three new coffees available on the website and for our wholesale partners!

Corpachi - ET47 - Panama
Washed · Terroir Forward

This one is super exciting for us. Another great coffee from @corpachiestatereserve. This time a washed ET47, super clean, delicate and complex. A great example of this interesting variety!

Best of Prau - Indonesia
Washed Anaerobic · Process Forward

One of the most exciting Indonesian coffees we’ve tasted recently from JB coffee Really elevated with its processing bright, vibrant and distinctive notes of Parma Violets, fruit gummies and a bright acidity.

Prau Hybrid - Indonesia
Washed Hybrid Process · Process Forward

Fruit-led and expressive, a less intensive process than with the Best of Prau with a softer, rounder profile.

We have been super busy cupping lots!!! of new coffees and have ton more incredible coffees releasing soon, Process led, terroir focused and a new core range! by @taithcoffee

Another EXCITING announcement for us at SIP FEST! We are incredibly proud to welcome @taithcoffee to the first @sipcoffeefestival

Taith is fully independent, owner operated coffee roastery, riso & ceramic studio and bookshop. They source their favourite coffees, roasting them with care and transparency to share them with you.

They are widely regarded as one of the best in Europe. Their attention to detail, ethical sourcing and “community not commodity” approach just says everything.

You’ve probably tasted their incredible coffees and seen their absolutely beautiful packaging on the shelves of some of your favourite Sheffield shops over the last year. Our city is definitely a huge fan of Taith and rightly so. Clean, balanced, sweet coffees roasted with serious precision.

With one of our favourite roasters and coffee spaces in the world, here we proudly present our new collaboration coffee with @taithcoffee 💙

Taith is a special place where coffee, ceramics, cassettes and books are carefully curated, with the most picturesque view you can daydream with… They roast and design their coffee in house and are always pushing the boundaries of coffee brewing behind their bar. Whenever we have a day off together, we love making our way over to Lewes and indulging ourselves in the little utopia they created.

The coffee we selected together is a Natural Tabi from @corpachiestatereserve in Panama. Perfect for both filter and espresso based drinks tasting like Blackberry, Lime & Florals 🫐🍋‍🟩🌸

Special thanks to Frances at @taithatelier for the gorgeous illustration of our favourite canal scene in Hackney Wick.

Now available to buy at Simmos in-store & online taken in Hackney Wick by @taithcoffee

New release time!!!

Six new coffees, Available Now (or very soon)

A really mixed bag of coffees in this release. A return of a process led banger, another incredible lot from the Long Miles Auction, some new farms and some favourite producers!
This will be one of the last few releases we do in this way. I’ve been thinking more and more about the way we purchase, present and showcase the coffees we offer. From this has come (I hope) a more refined approach that will mean better purchasing focus, a more interactive and experience led coffee program and more relationship development with those we work with. It’ll take a little bit of time and a new website that isn’t cobbled together but we are excited! More soon.

Edinson Argote - SL28

Very excited for this return! Always very popular, the SL28 grown by Edinson Argote. Bright, distinctive and incredibly sweet! A bold, process driven coffee results in a cup of intense strawberries and milkshake like creaminess.

Finca Santa Irene - Gesha

A natural Gesha from Guatemala. A first for us and it’s an interesting one. Sweet, floral and elegant. Grown and processed with low intervention in mind this coffee comes from a unique terroir leading to a clean, tea like cup!

Mutana Natural - Long Miles Auction

Purchased through the Long Miles auction. A coffee we wanted both for the cup and for the work and relationships behind it. Purchasing from Long Miles is always something we care about here and these Burundi lots really remind me of why it’s one of my all time favourite origins. Rich, bright and full of that distinctive Burundi Character!

Finca Gascon - Black Honey

We have wanted to work with Finca Gascon for quite some time and this lot gives us the chance to do that as well as continue our newly found love of the honey process. A humble cup in the best possible way, approachable and notable while enjoyable with lots of brewing flexibility!

Sebastian Ramirez - Wush Wush

Expressive, sweet and full. This Wush Wush is a real complex cup, as you may expect from a Sebastian Ramirez coffee! Expert processing results in a cup that resembles those typical Wush Wush notes but heightened and enhanced!

Four new coffees!

A 1st place auction winner from India. A special auction lot Burundi from Long Miles. A naturally processed Kenyan and a big crown pleaser from Colombia.

El Paraiso M03 - Colombia
Castillo · Double Anaerobic Washed Thermal Shock

Perhaps the most famous coffee from El Paraiso! An intensely expressive processed coffee with huge cardamom, pistachio notes and a cake like mouthfeel. This one is far from subtle, super punchy and a really interesting experience of a flavour profile being pushed through processing.

Gems of Araku: Transforming Young Lives - India
Selection 9 · Natural

The 1st place winning coffee from the Gems of Araku auction.

Our second year taking part in this auctions and it’s really a pleasure! An exciting opportunity for us to showcase what is happening in Indian speciality coffee at its highest level, while connecting with a really great project.

Like the Crimson Gains this coffee is a bold natural coffee, super sweet and floral while being impressively clean. A perfect profile for both filter and espresso!

Ninga Hill - Burundi - Long Miles Auction

Red Bourbon · Yeast Fermentation Fully Washed

A special lot purchased through the Long Miles Coffee Project auction. A really exciting expression of Burundi and a style of coffee we always want to see more of, bright, clean and structured, with the yeast fermentation adding another layer of complexity while retaining a clear sense of the coffee underneath. Notes of tangerine, chocolate orange and a prominent white wine!

A couple more lots are yet to release from this auction!

Thungari - Kenya

SL28, SL34 & Batian · Natural

A different expression of Kenyan coffee. Fruit-forward and intensely vibrant, while retaining the acidity and structure that make the origin so distinctive. A coffee that feels both unmistakably Kenyan and a little unexpected.

We’ve had a few natural Kenyan coffees on our offer list but none like this! Super juicy! by @taithcoffee
