🍕 🍔 Cast Iron Deep Dish Pizza Burger 🍔 🍕 Do you love pizza? Do you love a good burger? If you said yes to either, you'd like this. If you said yes to both, you'd absolutely love the pizza burger! ¾ pound burger seasoned and cooked direct over the coals with a good hickory chunk till the internal hit 150°. 🧂 - Bandido by @deranchoseasoning 🔥 - Medium Lump by @hardercharcoal 🌡 - Smoke X2 by @thermoworks #castiron #deepdish #pizza #burger #pizzatime #pizzalover #burgerporn #burgertime by @the_meat2021
🐖🐔Sausage Stuffed Chicken Wings🐔🐖 These wings were deboned before being stuffed with sausage. These took a bit of work to make, so it might be a while before I make these again, but damn, they were good! They were hit with a combination of rubs which ended up working great together. I've said it's tough to beat chicken wings cooked direct over charcoal. I stand corrected, sausage stuffed chicken wings have officially beat the original claim. 🧂 - De Mar and Apache by @deranchoseasoning 🔥 - @hardercharcoal #sausage #stuffed #chickenwings #grilledchickenwings #chickenwingrecipe #charcoal #charcoalcooking #grilledmeat #foodie by @the_meat2021
**The Meat Canoli** I know self praise stinks, but here it is . . . I think I just invented the best damn appetizer of all time! Crispy bacon filled with garlic mashed potatoes. I cut 1/2" black steel pipe into roughly 4" lengths. Wrap the pipe in parchment paper, then the bacon.  Tie a piece of buther's twine at each end to hold the bacon to the pipe. Next, I secured the forks of my rotisserie to the grill so they're facing up in the middle of the grill. Slide each bacon pipe over a fork and cook indirect at 425° for roughly 40 minutes.  The pipe retains the heat and continues to crisp up the bacon even after they're pulled off the grill. Untie, carefully remove the bacon from the pipe and fill it with your mashed potatoes. I tried this twice.  The first time with tinfoil and parchment paper on the second.  The bacon was much easier to remove with the parchment paper by @the_meat2021

🌮 Skirt Steak Tacos 🌮 A good marinade, hot and fast cook and a couple ingredients. That's all it takes to make some killer tacos. Don't complicate it. 🇲🇽🐂Mexican Meatloaf 🐂🇲🇽 Two amazing meals out of one cook. Delicious meatloaf the day of the cook then amazing meatloaf burgers with leftovers. To keep this consistent with the feel of this cook, tortillas were used in place of breadcrumbs. Soaking the tortillas in milk after the food processor hydrates and softens them enough to be incorporated into the rest of the ingredients. Save a little bit of the glaze to be used on the bottom bun of your burger. Poblano Lime Crema was perfect on top of the meatloaf and on the top bun of the burger Meatloaf Ingredients ● ● ● 1 lb ground wagyu by @newenglandwagyu 1 lb Ancestral Blend by @newenglandwagyu 1 lb ground pork 1 cup crushed tortilla chips ½ cup whole milk 2 eggs ½ medium onion, very finely diced 1 poblano, finely diced 1 jalapeño, finely diced 3 cloves garlic, minced ½ cup shredded oaxaca ¼ cup chopped cilantro 2 Tbsp tomato paste 1½ Tbsp Worcestershire 1½ tsp kosher salt 1 tsp cumin 1 tsp Mexican oregano 1 tsp smoked paprika ½ tsp ancho chile powder ½ tsp black pepper Glaze Ingredients ● ● ● ½ cup ketchup 2 Tbsp chipotle in adobo, finely chopped 2 Tbsp honey 1 Tbsp lime juice 1 Tbsp apple cider vinegar 1 tsp cumin ½ tsp ancho chile powder Pinch of salt Burger Ingredients ● ● ● Thick meatloaf slice Ciabatta Roll Pepperjack Cheese Pickled Banana Peppers Meatloaf Glaze Poblano Lime Crema by @themeatwagon2024 🐂 - ground wagyu & Ancestral Blend by @newenglandwagyu 🔥 - XL Lump by @hardercharcoal 🌡 - RFX by @thermoworks by @the_meat2021

💥Charcoal Chimney💥 Why I chose FABZ Ironworks over a galvanized charcoal chimney . . . Think about what a charcoal chimney does . . . You fill it with charcoal, you light it and then you let extreme heat run through it. So why would you want a zinc-coated piece of metal sitting directly over your fire? Galvanized steel is coated with zinc. When zinc-coated steel is exposed to sufficiently high temperatures, zinc-containing fumes can be produced. That’s not something I want to mess around with when I'm lighting the charcoal I'm about to cook my food over. That's where FABZ Ironworks comes in. You're getting a chimney built specifically for the job—heavy-duty metal, solid construction, and NO galvanized zinc coating. It's not some disposable, mass-produced chimney. It's a piece of equipment that's built to take the heat and built to last. Your charcoal deserves better. Your food deserves better. 🌱🐔🍕 Pesto Chicken Pizza 🍕🐔🌱 Tough to beat this one. It starts with my favorit high temp charcoal, @hardercharcoal Medium Lump Fresh cooked spatchcock chicken coated generously under and on the skin with fresh made almond pesto. Once cooked, pulled and mixed with more pesto. Pesto for the base then layered with the chicken, shredded low moisture mozzarella & parmesan, and topped with fresh picked cherry tomatoes. I'm feeling confident with my process for pizzas on the komado. - load up the grill with Medium Lump - set up pizza stone on the grate extender. The top of the dome is the hottest part of the grill, so this brings the cheese, toppings, and crust into the hot zone where they cook quicker - once the pizza stone hits 500% the pizza goes in - rotate pizza 180° at the four minute mark - check the pizza after another four minutes and pull if it looks good This should be the end of the cook. Pull and let rest before cutting. A delicious 8 minute pizza 🔥 - Medium Lump by @hardercharcoal 🌡 - #thermapen IR by @thermoworks by @the_meat2021
