Meet The Owner!

The Pine Table was created from a deep love and baking and cooking ❤️ we love developing recipes, tasting, testing, learning, and experimenting! We wanted to take a leap and jump head first in to the culinary world and we are loving every minute of it! All of our cookie recipes and flavors are 100% created by us - we spend lots of time in the kitchen making sure we get each flavor exactly right before bringing it to y’all! 🍪

Our goal is to bring delicious food from our kitchen to your table. While we currently specialize in unique, stuffed cookies, we have big dreams and plans for The Pine Table to grow and diversify our offerings!

HI Friends 🙌🏻 as market season is about to kick off, I wanted to share an exciting update for The Pine Table 🍪

First off, thank you to everyone for the continued love and support for the last year. It was unpredictable and did not turn out the way I had hoped. BUT I am finally pain free and back in the kitchen (part time) ❤️ I am still devastated to have missed an entire year, but sometimes life throws you a curveball and you have to take a step back.

Secondly - I had mentioned the potential of opening up weekly ordering and have decided against it; not because I don’t miss y’all and baking but because of some exciting life updates that require a shift.

And with that, the most important update of all: The Pine Table is officially closing this chapter in OKC/Edmond because WE ARE MOVING to MADRID🇪🇸 if you follow my personal page, you’ve probably seen some hints 🤫
I am definitely sad that this chapter in OKC is closing, but I am so excited for the future and what it brings. Keep an eye out though, because The Pine Table isn’t finished writing its story…you may even see us popping up around Madrid 👀and we fully intend to continue developing cookie recipes and baking. we may even start selling our recipes 🤤🍪

hi friends! it has been a long time since I have posted and we are nearing a full year of my back issues coming to a head that resulted in my forced time off 😭

over the weekend, I hosted a fabulous Galentine’s Party complete with a full spread, cake & cookie decorating, cocktails and a candy bar. It was such a fun event and I thrived being back in the kitchen 🫶🏻🍪

with that, I wanted to provide an update on reopening my bakery. Originally my plan was to start gearing up for market season and getting back in the action. Unfortunately, this weekend showed me that my body is not ready to be back in the kitchen full time. this is not what I was hoping for and it is a tough call to make after being closed for so long. With two spinal surgeries within 5 months, I am trying to give myself grace but I would be lying that this isn’t a hard journey. I have truly missed being in the kitchen, being around the community, and sharing my sweet treats with the world 😭

my hope is as I continue with physical therapy that I can regain the strength I need to be in the kitchen pain free. I have played around with the idea of reopening custom orders and small weekly orders, but I’m just not ready physically 😓

I thank everyone who has continued following me and supporting me during this challenging and unpredictable time 🫶🏻❤️

keep an eye on my stories as I try to open small baking slots here and there 🍪🧁

you really can’t go wrong with a batch of Biscoff Cookie Butter Cookies fresh out of the oven! 🍪🍪

we upgraded our Cookie Butter Cookies a few months back, but they never made their debut at the Markets since we unexpectedly had to temporarily suspend baking 😭 but we wanted to share these delights with y’all!

So what changed? We add crushed lotus cookies directly in the dough now, along with chopped chunks of white chocolate - these additions add a wonderful texture throughout the cookie and enhance the biscoff flavor! Don’t worry though, we still use our signature browned butter base and stuff it full of creamy, biscoff cookie butter! 🤩

our head baker has been back in the kitchen, sparingly, to do a little testing and small batches for friends and family! This batch was made special for the incredible staff at Britton Road Vet after saving Piggy during an emergency surgery 😭🙌🏻

We hope to be able to bake for y’all again so soon!Our next follow up in Oct 6th and we will have more information on next steps for our spine. we miss everyone and we miss the kitchen 🍪🍪

Hi Cookie Fam! 🍪🍪🍪🍪

I miss baking
I miss markets
I miss the community
I miss my customers, friends, and fellow vendors

I am just popping in to say hi! it’s been about 6 weeks since surgery and I wish I had a better update and timeline of when I can get back in the kitchen. Unfortunately though, surgery and recovery has been much more challenging than I expected (or hoped).

While surgery did go well, the pain has not subsided yet and I am feeling the same as before surgery. The team wants to do a contrast MRI to see what else is going on and if there are any other options or if it’s just a waiting game. I want to be open and honest here since a lot of social media can be fake - this has honestly been the most challenging few weeks. In addition to my surgery, my father required triple bypass just a week after me which added stress and anxiety ofc. My dad is doing great though, thankfully!

Anyways, don’t forget about The Pine Table, even though we aren’t at the markets or taking orders and I’ve had to temporarily close and shut down our website due to the high cost, I am still here and will be back better than ever. Hopefully I will be back sooner than later. I am hoping once physical therapy starts, I can slowly take a few orders a week, even if I am not ready to jump back in full time.

Hi friends, Aly here! 🫶🏻 we miss everyone so much and wanted to provide some updates on surgery!

I officially have a surgery date that is quickly approaching! My spinal surgery is scheduled for Friday June 6th 😳 with an expected 12 week recovery! With this timeline, I am unsure what that means for market season but I am very hopeful that I can rejoin markets and events in late summer/early fall 🙌🏻 I will keep y’all updated on how things progress.

I am so thankful for all of the support and messages during this extremely difficult time. As a small business owner not being able to participate and contribute has been absolutely heartbreaking and really hard 😭 Y’all know how much I love being out at the markets, meeting people, chatting with friends, and just hanging out with y’all! So going from that to barely being able to leave the house because of the pain has been devastating.

A lot of people have asked how to help and honestly the best way is through a meal. Of course, our family expects nothing, but if you feel drawn to help during this challenging time, bringing a meal would mean the world to us since it’s one thing we don’t have to worry about! The first 6 weeks of my recovery I won’t be allowed to do really anything (and I’m terrified to have to eat my husband’s cooking for that long 🤪 jk!). A meal train has been started and we are so thankful for all the support we’ve received and continue to receive 🫶🏻🫶🏻

UPDATES! please read for some v important info regarding our health and 2025 market season.

Aly here (the owner, the baker, and the face many of y’all see representing The Pine Table) as many of you know and have been following, the start of the market season has not exactly gone as we’ve planned or hoped. For the last 2 years I have been experiencing back pain and have undergone several treatments. Although none of the treatments have resulted in the pain completely going away, I have been managing. That all changed about 4 weeks ago when the pain became significantly worse resulting in the inability to walk.

After my last doctor’s visit, I received devastating news that Spinal Surgery is now my only treatment option as the damage continues to worsen as does the pain.

So what does this mean for The Pine Table? This unfortunately means that our 2025 market season has ended before it even began. I am beyond heartbroken, frustrated, sad, mad, you name it. I meet with the surgeon next week to determine a timeline of surgery and recovery. and maybe just maybe we will have a small window at the end of the season once we are healed to do a few popups but unfortunately with the pain I am currently am, I am unable to stand for long periods of time and just can’t bake what I need for markets 😭😭😭

this is not the decision or outcome I was hoping for and I want to thank everyone from the bottom of my heart for all the support and love 🫶🏻❤️ I know The Pine Table will be back and better than ever, but for now I must hang up my apron and focus on my health and recovery. I will provide updates once I have a surgery date for y’all to follow along, if you want! I am hoping that I can do one last PopUp before surgery, depending on my pain and surgery date.

These Dark Chocolate Toffee Sea Salt Cookies are anything but ordinary 🤤 they start with our browned butter base and get loaded with dark chocolate chunks, made in house toffee, then topped with flakey maldon sea salt 🙌🏻

These are not officially available online as these are our exclusive cookies for @verdeokc but we do occasionally surprise y’all and bring them to an event to get ya hooked 😝

This weekend you can find us BACK at Scissortail Farmers Market from 9am-1pm on May 3rd! We will have our delicious focaccia and an assortment of our cookies (menu will be posted later this week!). We will ALSO be returning to Verde on May 5th - we know y’all need your weekly cookie fix! 🍪🍪

we are so excited to be back and cannot thank everyone enough for their support and understanding while we have been experiencing some not so ideal back pain, but the time off allowed us to heal! 🫶🏻🫶🏻

the before baking of that chili oil scallion focaccia 🤩 we don’t know what is prettier - a pre or post bake moment! Pre bake you can see all the jiggles, dimples, and air bubbles and it’s a mighty beautiful sight.

this focaccia is a fan favorite at the few events we’ve done so far in 2025 and our personal favorite to rip and snack on throughout the day…as if it lasts that long 🫣 it’s crispy exterior and fluffy, soft interior are what bread goals are made for. We love the slight spice from the chili crunch oil that adds so much aroma and flavor to the bread. And no chili oil combo is complete without green scallions 🤤

we are loving getting in to the savory side of baking with these delicious focaccia breads. and we love getting to bring y’all new items to fall in love with! 🫶🏻🥖

focaccia makes a great bread for a sandwich (just slice it horizontally in the middle, open it and load it up); it’s perfect for ripping and dipping (think chunky bread dunked in a garlic oil or slather on some hummus); and it’s the perfect snacking bread to just grab a hunk and enjoy!

the twix 🍪

a new cookie that will quickly become your new fav! We had a few requests for this flavor AND it is our favorite candy bar. caramel, chocolate and shortbread - what is not to love 🤤 we wanted to try to get those same flavors in cookie form and we LOVE how this one turned out! It is also now officially available on our website for ordering and will be in our weekly market rotation 🙌🏻

we start with our buttery sugar dough base, mix in made in house toffee, shortbread pieces and milk chocolate chunks before filling it with made in house deluxe de leche! when it comes out of the oven we top it with more toffee and a giant piece of shortbread! 🍪🍪

it is so buttery and delicious with crunchy pieces of toffee and that silky, creamy dulce gives it so much flavor and depth.

brown sugar cinnamon focaccia 🤤

if you’ve ever thought focaccia is only meant to be savory, think again! Sweet focaccia might be even better 😍

this focaccia has swirls of brown sugar + cinnamon, pools of browned butter, and a glaze drizzled on top. it’s so fluffy on the inside with a crispy exterior and the browned butter with the brown sugar and cinnamon is really something magical 🙌🏻 it’s like the best dessert you’ve ever had and we love to heat it in the oven or air fryer just before serving for the most delicious night time treat!
