🍵🍓 MATCHA SWISS ROLL. Recipe ⬇️

Soft, fluffy matcha sponge filled with fresh whipped cream and strawberries! I’m in love! I sell cakes from home and now I’m just sharing my knowledge so you can bake for your family/friends/boothang. And impress them ;)

For your cake to turn out nice & green, I recommend using quality matcha powder, ideally premium or ceremonial grade. Higher grades use younger first-harvest leaves, which has high levels of chlorophyll. I used @thea_matcha 💚 either their premium or superior range works great 👍 if you use poor quality matcha, your cake will turn khaki brown.

INGREDIENTS

🍵 Matcha Sponge - 24cm by 34cm pan

* 6 medium eggs, separated
* 130g milk
* 1 tsp vanilla essence
* 130g self-raising flour
* 10g quality matcha powder @thea_matcha
* 60g vegetable oil
* 90g sugar (egg yolk batter)
* 90g sugar (meringue)
* 1 tsp lemon juice

Filling
* Fresh whipping cream 400ml
* Fresh strawberries
* 60g sugar (for the cream)

1. Mix egg yolks with milk, oil, vanilla and 90g sugar. Sift in flour & matcha powder, then mix again until smooth.

2. Make the meringue. On medium high speed, beat egg whites with lemon juice until foamy for the first 30sec. Gradually add 90g sugar in three batches and whip until smooth, glossy thick. Change to low-medium speed towards the end.

3. Gently fold the meringue into the matcha batter in three additions. Use a big whisk to fold in one direction like how I did it in the video.

4. Pour into a lined baking tray, spread evenly and tap to release air bubbles. Bake at 150°C for approx 30-35 minutes.

5. Rest for 5 minutes before inverting onto fresh baking paper. Gently peel away the original paper. It’s normal for the thin brown skin to come off!
Flip the sponge back over, remove the other side, then gently roll it up with the baking paper while still warm.

6. Allow to cool completely. Pop the rolled cake in the fridge for atleast 2 hours before adding the filling. Spread with whipped cream, add strawberries and roll it back up.

Wrap tightly & refrigerate for 1–2 hours to set. Trim both ends for a clean finish, slice and enjoy!

Our Instant Matcha Lattes are now in all @farrofresh stores!

When we first launched, we weren’t sure how it’ll go but we knew that there wasn’t a true “instant” matcha without all the vegetable oils, numbers and lots of numbers added into the ingredients list. Now we are 70% sold through our first batch since launching end of August - thank you! There are other new products in development which we can’t wait to get you involved - more on this later.

Plus an exciting new retailer to announce on the horizon… 💖

MATCHA SERIES PART 1 - Superior Mie

What should I try from the range?

Matcha should be treated like coffee and wine, where there are subtle yet different flavour notes between regions, cultivars and how tea is blended by tea masters.

Our range is broken into tiers, and to qualify into Superior, it is better quality first harvest matcha.

Notes: Bright umami, honeydew, sweet potatoes

It’s cultivars:
Yabukita - balanced, fresh green notes. Mild umami, slight astringency
Okumidori - Deep umami, rich sweetness, smooth finish

Overall, this is a smooth, sweeter matcha.

Have you tried our Superior Mie? (we know for some of you, it’s a favourite).

NEW THEA VLOG! LINK IN BIO

A lot has happened this month and we couldn’t be more grateful. We had the pleasure of partnering with Shiseido thanks to @riseandshinepr and we got to create a speciality hōjicha drink for their event. We also had a special collab with @houseofchocolatenz to create the most decadent matcha chocolate bar… which you guys sold out in 72 hours wow. With more exciting things that happened this month, May went on @95bfm to talk about matchaaa, which is a great listen so go check it out (link in bio) 🤭💚
