Meet Chef Dylan Shook, the heart behind The Independent kitchen. 👋

Originally from Michigan, Chef Dylan joined our team in 2025. Here, he has immersed himself in the unique ingredients and culture behind the Lowcountry’s foodways with favorite ingredients such as rice, field peas, and the vast seafood from local waters. He enjoys building relationships with local purveyors and strives to enhance the menu with new dishes that honor the regions culinary diversity.

When Chef Dylan is not in the kitchen, he enjoys trying his hand at cooking new cuisines and playing golf at the area’s many beautiful courses.

Last night, The Independent at The George had the pleasure of joining the Pawleys Island Wine & Food Gala, serving 400 of our “charcuterie bite in one” creations alongside chefs, wineries and purveyors from across the region.

The annual gala brings together food and wine in celebration of the Pawleys Island Festival of Music & Art, marking the beginning of a season dedicated to music, art and community.
