💖 THE MOST BEAUTIFUL HIGH TEA CELEBRATION OF FILIPINO CULTURE AND COMMUNITY

First, we’d like to sincerely thank team @abigailhallpdx at the @woodlark_hotel, for letting us take over their weekend Afternoon Tea service during a precious spring Sunday. Tikim’s special version of their tea service was our take on “merienda,” a meal between meals, featuring reimagined classics.

Up until the event, @triciasanmateo spent the week in NYC on a work trip, @janiep00 was neck deep in galas and events season while juggling motherhood, and I had my own crazy. But we wanted, needed, to make it work. Our hope when we pour our energy stores into Tikim is to bring community together. And we really felt that on April 30. For every familiar face that attended this special event, there were two new ones. It was proof to us that we are achieving our mission to bring people who are curious about, are nostalgic for, are familiar and unfamiliar with Filipino food together.

Tikim is a labor of love and is fully funded by our personal time and resources. Without hesitation, two fellow Filipino friends, Kuya @brrraaady and Chef @tjcooksinthe503, volunteered their time and talents to help us pull this off. @ninthwave.dj helped us create the atmosphere that was uniquely ours through music. @rosecityoon and @cafemedium for @bridgetotable lent us their expertise in documenting the one-day-only experience. Our amazing sponsors, our host @abigailhallpdx, @foglightfarms, and @devilsfoodcatering, helped us make it all happen, taking some of the stress off our shoulders since we fund everything we do from our own pockets. We have so much gratitude for everyone who made this event possible, to close out Filipino Food Month and welcome AAPI Heritage Month!

A LOOK BACK TO LOOK FORWARD

As we take a look at this year, we have so many reasons to be grateful. Despite all the obstacles and losses, we have made and continue to make some of the deepest connections with the folks of this very resilient community. And amazingly, the community has shown up and continues to show up!

As we learn to balance our own personal and professional lives to be in harmony with our personal efforts to support our community and move Tikim forward, it was important for us to take a step back and see what we’ve accomplished so far. It was also important to extend grace to ourselves and ensure we don’t push aggressive timelines. We are working on a Filipino service industry community-focused event to wrap up the year, and our next tasting menu event will be planned for Q1 2022. So please stay tuned for details, and thank you for understanding that we’re focusing on quality of events, not quantity.

In the spirit of gratitude and looking back at the journey so far, here’s a gorgeous video that @hunnyham and @dana_delaski of @filmsnacks shot to document our first supper club pop-up at @mestizo.pdx 

That event will forever be in our books as one of the most impressive examples of what this community can do. We are eternally grateful for everyone who helped us make it all happen, who snagged a ticket impossibly quick (selling us out in just over 2 minutes), and who continue to support us as we continue to build on Tikim.

🧵 The many threads that make up the fabric of my culture…

Here to show and tell this special piece I got while I was home in Manila recently! This is a Bolero Filipiniana, a short, elegant jacket that is part of traditional Filipino attire. This came into fashion during Spanish colonial era. It’s known for its intricate embroidery, delicate fabrics, and characteristic butterfly sleeves. The Bolero Filipiniana is a symbol of cultural beauty and sophistication for formal occasions. I’m loving how Filipino designers and clothiers are redefining the Filipiniana, making modern versions like this one!

What makes this piece more special is it features symbolic embroidery and sleeves of Binakol, a traditional handwoven textile from Northern Luzon, known for its geometric patterns that create movement and depth. This bolero was handmade by indigenous artisans and weavers from the Abra Province. Known as the Itneg or Tingguian of Abra, their unique weaving patterns and embroidery reflect their heritage. The style is rooted in folklore and mythology, descended from the Supreme Diety. Inspiration and points of view are of the land, nature, and farming traditions passed down through generations.

A collective culture consists of an interwoven set of shared customs, values, beliefs, stories, traditions, language, and so much more. My Filipino culture, particularly of Metro Manila, is foundational to what makes me, me. Woven into that fabric is my time, spending my formative years and living in America. ✨ Rating everything I ate at the FIRST JOLLIBEE IN OREGON during their first week of opening!

They have it dialed! As someone who was born in and grew up in Manila, Philippines, @jollibee holds a solid place in my childhood memories. Love that @jollibeeus expanded to the greater Portland Metro! It’s a bit of a drive from Portland, but it’s so worth it!

If you’ve never been to a Jollibee, it’s a now global chain that originates from the Philippines. It’s most famous for their fried chicken, Filipino-style spaghetti, and Peach Mango Pie. Don’t skip on any of those. The quality of food that comes from Jollibee is better than any other fast food chain, in my opinion. Fun fact: @joshuaweissman recently rated Jollibee as having the best fast food fried chicken sandwich on YouTube!

Congratulations, Jollibee Hillsboro, for a successful opening!! Thank you for taking the excellence globally!

🍑🥭 Peach Mango Pie

Growing up in Manila, Philippines, perfect mangoes were ubiquitous. Mango juice was my orange juice. I didn’t think this was all that special until I was without! Immigrating to America as a kid, what once were novelty and splurges became the norm: orange juice, chocolate milk, chocolate chip cookies, strawberries, @tacobell, pizza… What once was the norm became deep cravings: Philippine mangoes, saba bananas, @jollibee, kakanin, fish balls & dirty ice cream from a street vendor… While other kids coveted the newest toy, I just was looking forward to when I could eat ChickenJoy with rice & gravy again.

Fast forward to one of my first times ever going to a @portlandfarmers market with my now husband, about a decade ago. He had bought a couple big Oregon-grown peaches. We got home, and I almost passed on having one because I didn’t think I would like fresh peaches because of the fuzzy skin. He insisted I try. In a blink of an eye, I was hovered over the kitchen sink, peach juice running down my chin and my elbows, absolutely devouring a peach like I would a mango. It dawned on me that peaches are like an American mango! Similar textures, but to me, peaches are a bit more floral.

And that memory is now what comes to mind when I take a bite of @jollibeeus Peach Mango Pie, after having my ChickenJoy with rice and gravy. What a beautiful thing to have my food memories evolve with me as I navigate my past, present, and future identities.

It’s time to show up, Portland. ✊🏽

Several individuals from the PDX Filipino community have assembled a charity merienda (mid-day snack) event this week for those who want to come together in community to eat and donate to help in relief efforts. 

Join us on Wednesday, January 15th, 2025 from 4PM to 7PM for Merienda for Los Angeles. 

There will be food and drinks available for purchase, and all the proceeds will be donated to the @daylaborernetwork (NDLON) and @mypnasc (Philippine Nurses Association of Southern California). 

The funds being donated to @daylaborernetwork are to support immigrant workers impacted by the Los Angeles fires, and @mypnasc donations are to support the Los Angeles Fire Department Foundation, American Red Cross, and the Pasadena Humane Society. We’ll share receipts of donation shortly after the event once all funds are in.

Free to attend. RSVP for the event through the link in my bio so we can prepare enough food and avoid any unnecessary waste.

🤍 @beardfoundation Award Winning Chef @vincenguyen_’s @berlupdx is a modern Vietnamese tasting menu dream 

Team @tikimpdx was invited by Chef Vince to do a collaboration for a special @berlubakery soup. We were honored and had the best time working with the team and him. A reservation cancellation allowed Chef to transfer the table to us so we could celebrate the successful collab day. Every meal in this beautiful space is always one of the best meals I’ve ever had. This one was no different.

MAGNA KUBO

The long awaited spot from @twistedfilipino and in this venture, partner @soysaucedrip, finally opens today. This is meaningful because Filipino food is diverse and nuanced and we are beginning so see the different dimensions of it locally.

The Philippines is known for Lechon which is typically a whole pig slow roasted on a spit over an open fire. It is slowly turned by a lechonero and when done right, the meat is tender and succulent while the skin is crispy. While originally referring to a roasted pig, the term lechon is now also considered an umbrella term for various other roasted meats. 
@magna_kubo is a lechoneria, specializing in spit roasted meats and all sides that go along with it. They offer Lechon plates which come with your choice of protein (half/whole lb), rice, atchara and sawsawan plus a variety of dishes a la carte that complement.

Here is what we ordered:
1 - LIEMPO - Crispy pork belly rubbed with garlic, lemongrass and onion
2 - SINIGANG CHICKEN WINGS - Chicken wings dusted with tamarind powder
3 - TOKWA’T KABUTE - Fried tofu and mushroom in a spiced tofu purée, scallions, cilantro and pickled peppers
4 - PANCIT CANTON - Egg noodles with roasted mushrooms, cabbage, scallions, carrots and other seasonal vegetables with shrimp 

Definitely go! They are currently open Wed-Sun but follow @magna_kubo for the latest updates and to learn more about what they do and what they are about.

🇵🇭🐝 I’m from Manila, so I grew up eating @jollibee - love seeing the cult-favorite Filipino chain expand to @jollibeecanada and @jollibeeus 

For first timers, order this:

1 - 2 Piece #chickenjoy (I prefer dark meat) with rice and gravy (I order extra haha)
2 - Jolly Spaghetti (Filipino sweet-style spaghetti with meatsauce + hot dogs)
3 - Pineapple Quencher
4 - #peachmangopie 

Bonus: I have yet to find a Jollibee in North America that has lumpia. If you see #lumpia on the menu, order that too!
