I’ve been meaning to do a proper write up on Eulalie for a long time, so this one is way overdue.

I first got to know Chip and Tina when I called to congratulate them on their inaugural Michelin Service Award. At the time, Eulalie and Sinsa had the same off days, so I wasn’t actually able to visit. Once I changed our off days, we finally made it in and it became a monthly standing reservation pretty quickly.

Since then, they’ve welcomed us like family. They dined with us at Sinsa, and we’ve shared almost all of our happiest occasions together at Eulalie. They always find a way to make each one extra special.

The entire experience is reminiscent of old school New York dining, in the best way. There’s no online reservation platform and the menus are handwritten. Attire is “swanky cocktail evening.” You call to make a reservation and Tina calls you back. Everything is personal from the very beginning.

I don’t remember all of the dishes in these photos and honestly, that’s ok. Nobody really takes photos there. You go to eat, drink and enjoy the people around you without having to think about anything else. We only snuck these because we just HAD to share them with people.

For anyone who misses having really good food and a really good time, call Eulalie and make a reservation. The food is incredible, and the hospitality and people create the kind of experience you especially crave when you’re caught up in the NYC rat race.

Working in and out of F&B and hospitality, it becomes surprisingly easy to lose sight of what drew you in to begin with. Somewhere along the way, it all starts to feel procedural, more about execution than experience.

This meal reminded me of that.

Not just the food itself, but the feeling of being taken care of in a way that felt deliberate and composed—the pacing, the progression, the quiet intention behind each course as it prepared you for what followed.

Everything flowed with the right amount of intent. Nothing felt forced, nothing overstayed, and most importantly, I was able to enjoy the meal with my mother, at our own pace.

It was my first time there, but even in a short conversation, it was clear how much thought continues to go into refining the experience.

To me, that is what hospitality really is: not only making something taste good, but making it easy to receive, in a way that stays with you even after the meal is over.

Recently had a chat about burnout and how to deal with it, or rather, how to prevent it. My take was fully commit to resting up when you’re resting, and slow down where you need to. Even an F1 car needs to be tamed, and holding down the pedal to the metal will always result in losing the race.

Never thought I’d be a nature guy. But sometimes the hustle and bustle wears on you and you look for some peace and quiet. And then it’s right back to it again!
