Restaurant Story x Alinea - The Chefs

“You have to be progressive and cannot stagnate.” @chefphillips

Tom Phillips is the Executive Chef of Restaurant Story, leading its kitchen with a focus on precision, discipline and a deep respect for the ingredients
he works with.

A Welsh-born chef, his cooking is shaped by a considered approach and an unwavering commitment to detail.

His training has taken him through some of the world’s greatest kitchens, including The Ritz in London, Thomas Keller’s Per Se in New York, Eric Frechon’s three-Michelin-starred Epicure in Paris and
Simon Rogan’s L’Enclume in the Lake District.

He has had the privilege of representing the UK twice on the Bocuse d’Or stage, first in 2019 and again in 2025, when his team finished fourth in Europe and fifth
in the world. Between competitions, he stepped back from competing to coach the UK team through its 2023 campaign, giving him a different but equally rewarding perspective on what it takes to succeed at that level.

Being part of the competition, in every role he has held, has shaped the way he thinks about technical excellence and mentoring the next generation of
British chefs, something that carries through to his day-to-day work.

Phillips joined Restaurant Story in 2017 and rose through the team to lead its kitchen, helping the restaurant earn its second Michelin star. Alongside
his team, he works closely with Story’s producers, bringing their finest ingredients, and the stories behind them, to the table.

Guess the dish… I bet you can’t 👀

Today I had the pleasure of being thoroughly spoilt by my dear friend Matthew at the fabulous Story Cellar, tucked away just moments from Covent Garden and part of the incredible Tom Sellers collection.

I like to think I’m a fairly adventurous eater, but every now and then the idea of a dish can make you hesitate before you’ve even tried it…

This was definitely one of those moments. 😂

Thankfully, Matthew insisted this was THE dish I couldn’t leave without trying. He promised me I’d love it — and he was absolutely right.

Snail Bolognese on toast 🐌🍞

And it was absolutely delicious. Rich, indulgent and completely unexpected. Who knew snails on toast could taste that good?! 🤌🏼

A little reminder to occasionally step outside your comfort zone… especially when someone who knows food tells you to trust them. 😉

Thank you @123mattoc for another fabulous foodie experience. ❤️
