A first look inside The Stockton Steakhouse, opening December 1st in Denver’s historic Livestock Exchange Building, and I can already tell this is going to be something special for the Colorado dining scene.

An extraordinary restoration of one of Denver’s most storied spaces, where original architectural details, grand chandeliers, rich leather banquettes, and timeless elegance meet a new era of Colorado hospitality.

The history alone is worth experiencing.

A beautiful restoration brought to life by EXDO Development Group, including Kevin Preblud and Andrew Feinstein, whose vision and dedication have helped preserve this remarkable piece of Denver history while giving it an exciting new chapter.

Behind this beautiful restaurant concept is Bryan Dayton, owner and founder of Corrida in Boulder, alongside Executive Chef & Partner Samuel McCandless. Their vision celebrates Colorado’s ranching heritage through exceptional beef, regenerative agriculture, locally sourced ingredients, and a genuine appreciation for the land.

And if you’ve experienced the incredible food and hospitality at Corrida, you already know the level of excellence they bring to the table.

I had the pleasure of attending an intimate preview, and between the beautifully crafted cocktails, incredible food, stunning surroundings, and energy in the room, it was clear that The Stockton is bringing something Denver has been waiting for.

The sophistication. The atmosphere. The history. The hospitality. Every detail feels intentional.

What excites me most is seeing this historic part of Denver come alive with a dining destination that honors its past while bringing a fresh sense of elegance and energy to the neighborhood.

This is more than another steakhouse opening. It’s a beautiful new chapter for Denver dining, and one I cannot wait to experience again.

Meet Bryan Dayton, Owner & Proprietor of The Stockton.

The Stockton began with a conviction: Colorado deserves a steakhouse that tells the story of its beef.

For Bryan, that story starts with Corrida Cattle Company, the beef program he founded and has poured his passion into. His commitment extends beyond sourcing exceptional steaks to supporting regenerative ranching and building lasting relationships with the people raising the cattle. The Stockton is his opportunity to bring that work to the forefront of the dining experience.

The name came from reading Porter and Ike Stockton, a book about the outlaw brothers of the Colorado–New Mexico border. Its connection to cattle country and the history of the West felt fitting for the restaurant he imagined.

As founder of Half Eaten Cookie Hospitality, Bryan brings years of experience to The Stockton. But this restaurant carries a particular ambition: to build something enduring around the beef he believes in, with the warmth and generosity that have always defined his hospitality. by @bryandcolorado

Love ya big guy! We did so much over a decade. I don’t really know what to write. Miss your laugh and forever charm. You and I always said you were working hard to be the front of the house and I was trying to get to the back of the house. The truth. You brought the personality and spark everywhere you went. I know you’re walking with all this love and magic where you are now in peace. We all grew up together in this wild life of restaurants and taking it to the next level. All the love brother. Daily mantras of making yourself a little better everyday, your personal ecosystem better everyday and Mother Earth better everyday day. I’m extremely passionate about regenerative agriculture and regenerative ranching. It’s something I’m constantly working on inside our restaurants to help push a better ecosystem. We have an amazing relationship with @savoryinstitute that’s helped us connect to many of our partners in the agriculture community. We’ve been fortunate to work with @caribouranchgrassfedbeef @xitranch @cartercountrymeats @bootheel7ranch among many more that are out there changing the ranching world and pushing for a carbon neutral future. My hope is that regenerative agriculture becomes the normal for our future. I encourage everyone to get out there and try to leave the world a better place one day at time. Preparing for anything life starts with ourselves. This is critical for mental and physical health to be able to be able to face all things positive and negative in our daily lives. Setting yourself up for clarity helps you in all situations. Teamwork is the next step in being successful. There’s rarely a true situation in life where you’re completely on your own. You may feel like it at times yet no matter where you are there have been people around you to help get you to where you are. Team dynamic can be a huge challenge and the most rewarding. Start with yourself and you will be a better team player for the success of the mission. Being in the arctic for a week it will be critical to be the best member of the team you can be at all times ready for any roadblocks and successes.
