You’ll have to keep scrolling for the recipe (I think it’s slide 16 or so). But along the way, please take the time to discover @house_of_mirin about 90 minutes from Melbourne CBD, if you don’t already know about it.

It is located in Yea. And calling it “idyllic” would be an understatement.

@house_of_mirin is a Korean-inspired nature retreat. Guests stay the night.

At comfy…

… and tasteful boutique accommodation.

Each room has a hinoki bathtub, but I don’t have photos of that (without me in it).

Adjacent to accommodation is the dining hall.

Where chef @sherinwong prepares a multi-course traditional Korean dinner using seasonal ingredients from the farm.

The menu is ever-changing…

… but one thing is constant. Most produce is sourced from the farm @mi_rin_farm just 5 minutes away. I had not tasted “farm fresh vegetables” until I tasted them here. I remember, one time, green chillies were plucked just 2 minutes before I ate them, with ssamjang.

Speaking of which: all the dishes are cooked using house-fermented Korean condiments including the 3 backbone sauces of Korean cuisine: gochujang (red pepper paste), doenjang (soy bean paste) and ganjang (soy sauce).

Many of them have been aged many years.

I love it here. It’s magical, day or night.

I miss the time when I came here with my friends for “kimjang”, and we had ramyeon for supper.

Here comes the recipe.

This is the recipe that @sherinwong shared with me. It’s the kimchi that she makes and serves at @house_of_mirin … the surprising thing is that I haven’t the exact measurements because so much of it is done to personal taste, to be developed over time.

But as a rule of thumb: 2 whole cabbages would use about: 100g glutinous rice paste, 200g gochugaru, 1 bulb garlic, 1 piece ginger, 1 medium sized onion, half a pear (or apple), 3 tablespoons each of fish sauce, fermented shrimp, and fermented fruit extract. Bunch of chives. You can add Korean white radish as desired.

We had fun.

I hope you liked this post. And that you will share it with your friends and family.

And most of all, that you will visit @house_of_mirin.

My quiet weekend at House of Mirin, taking part in Kimjang, the beautiful tradition of making kimchi together before winter (in our case, right smack in the middle of winter). It’s such luxury to get back to nature, slowing down and sharing food stories.

Thank you, @sherinwong , @mingnetan and @kristychung0910 for opening your home and looking after us so generously. Your warmth, hospitality, and passion for food made this experience one I’ll carry with me for a long time.
