@just_the_roaster is our Co-Founder. Raised in Seattle, He studied business administration but he fell in love with coffee. You have been used to see him in all our courses and classes (since 2017) helping, brewing and serving coffee, roasting, always smiling and receiving our students and customers. Starting 2024 Dylan will be our second SCA Authorized Trainer at Coffea. He will start with Barista and Green Coffee courses. He is a CQI Post Harvest Processing Assistant Instructor as well, so he will be teaching these classes too. We are more than happy to received and welcome Dylan as a coffee trainer. Like someone said, it’s about time Dylan!😍🧑🏻‍🏫

Dylan es nuestro cofundador. Criado en Seattle, estudió administración de empresas pero se enamoró del café. Estás acostumbrado a verlo en todos nuestros cursos y clases (desde el 2017) ayudando, preparando y sirviendo café, tostando, siempre sonriendo y recibiendo a nuestros alumnos y clientes. A partir de enero 2024, Dylan será nuestro segundo formador autorizado de SCA en Coffea. Comenzará con cursos de Barista y Café Verde. También es instructor asistente de procesamiento poscosecha de CQI, por lo que también impartirá estas clases. 𝗪𝗵𝗮𝘁 𝗜𝘀 𝗕𝗶𝗿𝗱 𝗙𝗿𝗶𝗲𝗻𝗱𝗹𝘆®️?

Bird Friendly®️ is a certification developed by the 𝗦𝗺𝗶𝘁𝗵𝘀𝗼𝗻𝗶𝗮𝗻 𝗠𝗶𝗴𝗿𝗮𝘁𝗼𝗿𝘆 𝗕𝗶𝗿𝗱 𝗖𝗲𝗻𝘁𝗲𝗿. Coffees carrying this seal must come from certified organic farms and be 100% shade-grown, protecting habitats that support birds, biodiversity, and healthy ecosystems. It’s one of the most demanding environmental standards in coffee.

Shade-grown, organic coffee helps preserve forests, protect migratory birds, and maintain biodiversity while improving soil health and farm resilience. These systems support not just coffee plants, but entire ecosystems — making coffee farming more sustainable for the long term.

I’m so lucky that at times I feel guilty for stealing your heart! I didn’t mean to, it just happened. Was it the heartfelt conversations or the simple touch of a hand?
Now we enter our bronze year. A show of strength. I don’t expect things to get easier, we’ve been tested and will continue to face trials and challenges. I’m willing to face them together.

The Day has finally arrived. A new chapter in our journey!

Born from the union of Coffea School and
Miami.Coffee under a single name and vision. For years, we worked under different brands—teaching, roasting, and building community—but we realized that the real strength of our work wasn’t in separate identities. It was in bringing everything together, into one clear purpose. Coffee Flock is a name that embodies who we are and who we serve.

A flock moves together, not because every bird is the same, but because they share a path, a direction, and a purpose. In the same way, our community is made up of diverse people—students, roasters, baristas, and coffee lovers—who may come from different backgrounds, but come together through coffee.

☕ Happy National Coffee Day! ☕
Today isn’t just about celebrating that perfect first sip— it’s about celebrating you: our customers, your coffee rituals, your stories, and what makes coffee more than just a beverage.

Some Coffee by the Numbers
Here are some recent stats that show just how big coffee is in America right now:
- 66% of American adults drink coffee every day.

- On average, coffee drinkers have 3 cups per day.

-Specialty coffee (espresso-based drinks, cold brew/nitro, and other “premium” approaches) is on the rise. About 46% of adults reported drinking specialty coffee in the past day— surpassing traditional coffee, which is around 42%.

- Home-brewed coffee remains very strong: most coffee drinkers still have their cup at home. But out-of-home consumption (cafés, drive-throughs, etc.) is recovering and growing again.
